Also called Dan Dan Mein, this is a popular Hunan dish.

 

Noodle ingredients: 

3/4 pound Chinese thin egg noodles or thin spaghetti

1 Tablespoon chopped green onion or scallions 

Sauce ingredients: 

2 teaspoon peanut butter

1/2 teaspoon sesame paste

1/4 teaspoon sesame oil

1 teaspoon dark soy sauce

1 teaspoon rice wine vinegar

white sugar to taste

fresh ginger juice to taste

1/4 teaspoon minced garlic

1/2 cube chicken bouillon

1 teaspoon chili oil

1 teaspoon szechuan peppercorn oil 

Directions: 

Cook thin egg noodles in hot water until soft and drain. 

Mix all sauce ingredients together until blended and heat together on low heat in a small pan until they are melted or blended together. 

Mix together the hot peanut sauce with noodles and serve with chopped green onion or scallions on top. You may also garnish with finely chopped peanuts with the chopped onion if you wish. 

Note: If you prefer, you can add thinly shredded carrots to the peanut mixture when cooking. Be careful not to overcook carrots. You may also add bean sprouts with the shredded carrots if you wish.
