I rarely eat leftovers but wasting food is not a thing I am fan of. Today I took some left over chicken breast and made a quick easy Left Over Chicken Croquette
3 cups left over chicken diced small
1 med onion sauteed
1-1/2 bread crumbs
Salt/Pepper other spice to taste
2-3 eggs lightly beaten. (Start with 2, if mixture is too dry to patty add more)
Fry on Medium heat until golden brown on each side.
The great thing is you can easily customize this to your taste or available pantry items.
Peppers would be a great addition in place of part or all of the onion, maybe even add some cheese. Either way it is a quick and easy main course.
These amounts will feed two -three adults with my size appetite 🙂
