SERENA’S QUICK N’ EASY CHOCOLATEY PEANUT BUTTER – BANANA CAKE

1 Devils food cake mix

fix as directed only take one banana and mash then add and mix well.

Spray two 8 inch rounds with Bakers Joy

Divide your batter into each round

Put in preheated oven at 350 degrees for about 17 minutes or till done as oven temps vary..  your cake should be firm but moist not over baked.

Take out and let cool on cooling rack

Make your Peanut Butter Banana Icing:

No real recipe  I just took two bananas and mashed them

then add 1 tbsp of lemon juice to your mashed bananas.

I took half a stick of margarine and beat it in my kitchen aide mixer

then added two cups confectionary sugar

add 1 tbsp carnation Evaporated milk or  a heavy cream to your mixer

then add in your mashed bananas.

add another cup of confectionary sugar blend in well

then you will add about two large scoops of Jiff Creamy Peanut Butter

check your consistency of your batter and taste it..

Now your cakes are cooled..

slice a banana and place all over the top of your cake

add icing over top of the bananas

take your next cake round and if it is uneaven like this one simply grab your serrated bread knife and go evenly across the top where it is bubbled.

Now place round on top with CUT SIDE down..

I simply made me a milk chocolate rich icing out of 1/2 stick melted butter, 1/4 cup cocoa,  2 or more cups confectionary sugar and a little heavy cream and vanilla

Take your peanut butter banana icing and spread over top of cake. Now  you will take a thick rich chocolate icing and put around the sides..spread around the sides and pipe a few droplets in the middle then place a few bananas for garnish if desire

Cut immediately..

if you have leftovers I would put in the fridge due to the bananas.

Enjoy!

Serena
