Sausage and kale soup
1 T olive oil
1 lb turkey hot Italian sausage
1 medium onion, diced
2 15.5 oz cans cannellini beans, drained and rinsed
1 large bunch fresh kale, cleaned, stemmed, deveined and chopped
6 c chicken stock(not broth
…Saute sausage and onion I’n oil until cooked through
add beans, stock and kale
bring to a boil
reduce to a simmer for 20 to 30 minutes
salt and pepper to taste, but hot sausage has lots of flavor, so you may not need it…enjoy!
Gluten free, dairy free, soy free…low calorie, full if healthy ingredients…have made it twice in the past 2 weeks…hubby approved!
