HONEY SPICED PEACHES

(NOTE I ONLY USE THESE PEACHES FOR MY HOMEMADE SPICED PIES, I DON’T MAKE THEM THIS WAY TO EAT STRAIT OUT OF THE JAR… PIE RECIPE BELOW ALSO)

yields 3 quarts

8 lbs small peaches
1 cup sugar
4 cups water
2 cups honey
3 cinn sticks
1 1/2 tsp whole allspice
3/4 tsp whole cloves

Wash peaches drain, take whole peeled peaches, treat to keep from darkening (your choice)
Combine water and honey in a lg sauce pot. Cook until sugar dissolves. Drain Peaches and cook one layer at a time in syrup 3 minutes or until hot throughout. Pack hot peaches into hot jars leaving 1/2 inch head space. Add 1 cinn stick, 1/2 tsp allspice, and 1/4 tsp cloves to each jar.

Ladle hot syrup over peaches, leaving 1/2-inch head space. Remove air bubbles. Adjust two piece caps. Process 25 minutes in a boiling water canner

 

SERENA’S OWN MADE FROM SCRATCH PEACH PIE

2 Jars Canned Spiced Peaches

Separate juice from Peaches
Take juice and put into pot

add in a cup a small amount of cornstarch mixed with water
then pour mixture into the pot with the peach juice.

on low heat makes thick paste, do not burn, add in peaches and large tab of butter. Add in some brown sugar (I don’t measure my homemade recipes)

taste make sure it is sweet

Pour into ready UNBAKED pie crust

Take another rolled out crust and put on top, decorate with Vent holes

Bake at 350 for 1 hour

NOTE IF YOU DO NOT HAVE GARDEN CANNED SPICED PEACHES YOU CAN USE STORE BOUGHT PEACHES BUT YOU WILL HAVE TO SPICE THEM USING CINNAMON HONEY ALLSPICE CLOVES SUGAR
