1 tbs. oil

pinch of cumin seeds (whole, not powder)

pinch of mustard seeds

2 tsp minced ginger

3 cloves garlic – chopped

1 onion – thinly sliced

1/2 tsp. ground turmeric

2 tsp. chili powder

salt and pepper to taste

chopped cilantro

1 medium cauliflower, cut into flowerlets 

Heat oil in pan and fry the mustard seeds. When the seeds start to pop, add the cumin, ginger, garlic, and onion. Stir until the onion has turned golden. 

Sprinkle turmeric and add cauliflower. Stir fry for another 2 minutes to coat the cauliflower. 

Add the chili powder, salt, and pepper. 

Cover pan and cook until the cauliflower is soft. Stir occasionally. Toss in cilantro when ready to serve.
