The easiest recipe I can think of lol. It has a lot of variations, and you can substitute the fruit as you like, or drink it plain, as most Indians do. 
1 cup plain yogurt (fat free works just as well as regular)

1/2 cup water

dash of salt

3-5 tbs. sugar (add as needed to your desired sweetness)

1 tsp. lemon juice (optional)Blend all ingredients in a blender, lassi will be watery. Serve over ice and sprinkle crushed pistachios on top.

 

 

Mango Lassi

Same as above, add 1 fresh mango. (may need less sugar) 

Banana Lassi

Same as above, add 1 banana. (may need less sugar) 

Strawberry Lassi

Same as above, add 1 cup fresh strawberries.
