fried hushpuppies

have you ever wanted hushpuppies for one or two and just do not want to get the deepfryer going? well this is what i came up with….

one cup self rising flour

one cup self rising corn meal mix (i use yellow)
one half cup chopped onions
two eggs.

mix all ingredients add water or milk or a mixture of both,
just enough to get the mix to a spreadable stage.

meanwhile put oil in a large frying pan, just enough to cover the bottom of pan.
i use either canola or olive oil.
heat the oil on medium heat until a drop of the dough dropped into pan sizzles,
mixture should be thick enough to not spread by itself in pan.
drop large spoonfuls into hot oil and spread with spoon
when the edges look crispy flip them over and fry other side.
you will need to add a little more oil when you turn them.

my family loves them!
