If you have never used Fresh Frozen Coconut on top of a cake, you are missing out on something delicious. It is usually in the freezer section near the cool whip; it’s in a flat bag so it’s hard to see. The local Kroger’s carries it where I live.

  • Rosetta Sperring Patricia, I was thinking of making a coconut cake for one of the corpsman at the Navy hospital, he is deploying to Afghanistan and his last day is Friday. We are having a going away party for him and I was wondering if this would be the same as the regular coconut on top of a cake…what makes it different? Is is regular coconut that you have to thaw then put on the cake…not sure what makes it different.
  • Patricia Stover The frozen coconut has to be thawed; it tastes like real freshly grated coconut. There is a world of taste difference and it’s moist, not dry like what you get out of a bag or can. I use it on top of my coconut cake recipe which has a can of cream of coconut in it (near the liquor section like u make pina coloda’s with), and my cake has cool whip on top of it.
