    Colombian Beans cooking and “Spanish Rice” all made
    Put 1/3 cup olive oil in “Large” skillet. Stainless steel,or iron.Add 2 cups washed and dried white rice(I sometime use br.) Stir constantly till rice is golden brown.In another fry pan saute 1 cup onion chopped,1 cup chopped celery,1 c. chopped green pepper.Saute till tender. Add four cloves chopped fine, fresh garlic cloves.Add to rice. Add 1 cup water and two cups of veg. V-8 juice.Cook on low( and keep it moist) till rice is tender ,but not mushy. Add any spices you like.Sea salt and fresh ground pepper. I like just a dash of cumin and fresh chopped cilantro leaves., and a dash of Toney’s seas.
    I LOVE this recipe. With beans …or anything.I don’t usually add meat to the rice.I serve other dishes w/meat.It’s wonderful w/beans and pork rst. Enjoy!!
