Easy Dijon Roasted Potatoes

1-1/2 lbs. Small red , Yukon Gold or Regular Russet Potatoes quartered

1/4 cup Frenches Dijon mustard

1/3 cup olive oil

2 tsp dried rosemary thyme or oregano leaves

salt and pepper to taste


Place potatoes in large baking dish

Whisk remaining ingredients in measuring cup until well blended.

Drizzle over potatoes. Toss to coat.

Bake at 425 F. For 30 to 40 min. Stirring often until potatoes are tender.
