Chicken Tortellini

So we were talking about Home Canned Chicken the other day and a few of y’all asked what do I do with it
Well it’s handy
Their are several recipes perfect for it
This is one.. as well as buffalo chicken dip, chicken and dumplings, soups, bbq sandwiches, quick chicken salad, casseroles, tons of ways to use canned chicken
Here is a favorite hope you enjoy

Large deep sauce pan add a splash of olive oil and three cloves garlic minced

I then add a quart (or pint) of my canned chicken (reserving broth for later)
Season chicken with pepper parsley and a while stick butter

Add two packages of cream cheese
1 cup Parmesan cheese

Two cups or more of milk


Continually stir
I now add the rest of the broth from my canned chicken taste and add more pepper and garlic if needed

And yes if you have mushrooms on hand you can add to this dish if you desire

Open one can of spinach and squeeze out water
Add 1/3 cup of the spinach to the sauce and the rest of the spinach I cut some onion up and add to that with salt and butter and heat for a side dish

Add a whole 2 lb bag (36 ounces) of Cheese Tortellini to salted boiling water.
Let it boil about 4 minutes and add tortellini to your sauce
Turn off heat and toss well

Enjoy
