Sour cream & Cherries Skillet Cake

2 Eggs (or 1 egg and 1 egg white)
1 cup sugar
1 cup sour cream
1 tsp baking powder
1/2 tsp baking soda
A few grains salt
1 1/2 cups flour
1 tsp vanilla
2 cans cherry pie filling or one quart

Beat eggs until light and fluffy. Add sugar
A little at a time… beating continuously
Add sour cream
Beat again. Sift in dry ingredients and combine mixtures add vanilla
Spices may be added if desired .. I’m not

In buttered 10 inch cast iron skillet add quart of canned cherries or two cans from store
Sprinkle sugar over top

Pour sour cream cake batter over top
Sprinkle sugar again
Put in 350 degree oven about 30-35 min or until done

Let sit a bit before cutting

Serve warm with vanilla ice cream or cold with warm milk poured over
