BROCCOLI STUFFED CHICKEN BREASTS WITH PENNE & ALFREDO

1 pkg Stove Top Stuffing chicken flavored
1 cup water
Family pack -boneless skinless Chicken breast
Broccoli florets (chopped in large pieces)
1/2 cup Large curd cottage cheese
1 cup milk
1 tsp paprika
grated parmesan cheese
Parsley flakes
pepper
Mozzarella cheese
2 Large spoonfuls of my Alfredo sauce (recipe and directions for sauce at bottom)

Preheat oven to 400 degrees

DIRECTIONS

Combine stuffing mix and warm water in large bowl: let stand 5 minutes.
Meanwhile pound chicken a bit thinner and slice one side but not completely through, creating a pocket

Chop up broccoli florets in large meaty chunks
Add broccoli to stuffing mix lightly.
Add in large curd cottage cheese and some Parmesan cheese

Stuff mixture evenly onto chicken breast pockets
place chicken pockets in a 9×13 baking dish

pepper your chicken add a little Parmesan cheese and paprika to top
Pour over chicken evenly – a cup of milk

bake 1 hour or till chicken is done.

20 min before done add two big spoons of Alfredo sauce and sprinkle mozzarella cheese over top
Finish baking

Enjoy with Penne and Alfredo

Homemade Alfredo Sauce

2 cloves of garlic minced
2 sticks butter
2 cups milk
2 cups Parmesan cheese
2 8oz Cream Cheese
Parsley flakes
Black pepper

Melt butter with minced garlic- do not burn garlic
Add in Parm and a cup of milk stir well and add in cream cheese rest of milk and keep stirring … add in some pepper and parsley flakes
If too thick, you can thin with milk

Reserve 2 big spoonfuls to go over top your stuffed chicken
The rest you toss in your cooked and drained penne pasta to go with your chicken.
