Pressure Cooked Chicken Soup

 

So I needed my homemade chicken soup done a little quicker than the usual long slow boil to take to Mom and Dad so I used my pressure canner which is just basically a huge pressure cooker.
It worked out great ..

I added a whole chopped onion
baby carrots
3 stalks celery chopped
1 large clove of garlic minced
salt lots and pepper
2 chicken bullion cubes,
a whole bag of chicken quarters
add water just a little past the line don’t worry, it won’t cover your chicken, you can add water later when done… put lid on bring to pressure
then put on weight and once to 10 pounds pressure you will let go for 15 minutes.

Turn off stove eye. Take off weight and let pressure go down so you can carefully open lid.

 

 

 

 

 

 

 

Finish up your soup – Add water .. pull out any skin with tongs, debone some of the chicken if desire for easier eating, grampa never did but I do…

salt and pepper to taste add two quarts of whole canned tomatoes. And add your preferred noodles. ( orzo or small shells or alphabet ect) Let cook til noodles are done .. enjoy
