BANNANA-NUT APPLESAUCE CAKE

 

2 1/2 cup all purpose flour

2 cups sugar

1/2 tsp baking powder

1 1/2 tsp baking soda

1 tsp salt

2 tsp cinnamon

1/2 tsp cloves

1/2 tsp ground allspice

1/2 cup water

1/2 cup shortening

1 cup applesauce

tsp vanilla extract (if your feeling tropical, you can swap vanilla for coconut)

1 cup mashed ripe banana

2 eggs

1/4 cup or 1/3 cup chopped nuts (use your preference)

1 cup raisins

if you have them, some dried apples or some very small chopped apples

Works best in greased and floured tube pan. (I just spray bakers joy)

 

 

Mix 1st 8 ingredients in large bowl.

Add water, then shortening and applesauce.

Blend until creamy add eggs fruit and nuts.

Blend well.

Pour into prepared tube pan and add some sugar sprinkled around top. Then bake.

 

Bake in preheated oven at 350 till done. About 45 minutes to an hour.  Check cake towards end.
