Zuppa Toscana (Potato & Collards Soup)


8 or 9 potatoes, cut into meaty disks
4 cloves garlic, minced
1 onion, chopped
Put in your pot with some Chicken Broth, add some water
And add two chicken bullion cubes

Brown ground sausage (can use beef If desire) meat with the onion and garlic , pepper, salt, and a hint of crushed red pepper
Drain.

Add meat to pot
Boil till potatoes are add a can of evaporated mild
add some fresh collard greens, or can add a 1/3 cup of canned collard greens
To soup add Parmesan Cheese and to a cup add 3 tbsp Cornstarch and equal amount of water stir well and add to soup. Add a little butter for flavor.
