Old Time Cocoa Fudge Cake  with Fluffy White Icing or as some call it Seven Minute Frosting


1 2/3 cup Flour
1 1/2 c sugar
2/3 cup cocoa
1 1/2 tsp soda
1 tsp salt
1 1/2 cups buttermilk
1/2 cup shortening
2 eggs
1 tsp vanilla

Heat oven 350,
Grease pan,

Measure all ingredients, mix in large bowl on low scraping constantly.
Beat three minutes on high speed. Scrape bowl occasionally. Pour into pan/s

Bake 35-40 min for oblong… layers 30 minutes
Cool


make frosting

Fluffy White Frosting aka SEVEN MINUTE FROSTING

2 egg whites
1 1/2 cup sugar
1/4 tsp cream of tarter
1 Tbsp Light corn syrup
1/3 cup water
1 tsp vanilla

Combine egg whites sugar cream of tarter water syrup in top of double boiler.
Beat on high speed 1 minute. Place over HEAT and beat high speed 7 minutes

should see thick peaks…Remove pan from boiling water add vanilla

beat 2 minutes longer on high speed..

frost cake when cake is cool..

cake will be moist and fudgy inside…. DONE .. best eaten that day…
