SERENA’S CHICKEN VEGETABLE NOODLE SOUP


Recipe below is for large batch of soup..

This is very easy.. can be done on stove top or quickly in your electric pressure cooker (for large batches of soup I run electric pressure cooker twice , adding the chicken soup to a waiting pot on the stove when it is done)

Ingredients

1 can drained sweet corn

1 quart home canned tomatoes with juice

handful of frozen baby carrots..

4 chicken bullion cubes (only 2 cubes if doing small batch)

Boneless frozen skinless chicken breasts.. I put in about 6 large breasts (put in what you want)

lots of pepper

salt

parsley flakes

4 -5 cups water (less for small batch)

2 cloves garlic minced small ( only one clove if doing small batch of soup)

half of small onion minced

2 stalks celery with leaves cut small

1 cup orzo noodles

1/2 cup small macaroni noodles

 

 

Make soup by boiling all ingredients  EXCEPT for noodles- that is last cause you never want your noodles mushy- taste broth and season to taste..

(Note) when I make this large batch in my Electric Pressure cooker I do half and half.. meaning run the cooker twice (2 cups water each time at 25 minutes- then empty into pot on stove- add noodles boil till aldente and serve)
