RECIPE SUBMITTED BY Shelby Raines Walker

Shelby’ss Taco Soup

1 lb ground beef
chopped onion (to your taste)
2 cans Rotel Tomatoes ( I like mild)
2 cans of white shoe peg corn ( or you can use regular corn)
1 can great northern beans
1 can black beans
1 packet of taco seasoning
1 packet of dry ranch dressing mix
1 Jar Mild Taco Sauce
Brown meat and onions and drain. In a large pot mix all CANNED ingredients with the juices, do NOT drain any of the veggies! Add water to make it as thin or thick as you prefer…I like mine a little thicker. Bring to a boil then add the packets of taco seasoning and ranch dressing mix and simmer for an hour. Serve with sour cream, shredded cheese, tortilla chips…you can sprinkle green onions or regular onions on as an addition. Have fun and enjoy! It is simple and delicious!

Double the recipe or add your own amount of veggies to your taste..but make sure to use the packets of taco seasoning and dry Ranch dressing mix (it just makes it a little different).
