here is the the cream pie filling my Moma used for her banana pudding,and her coconut cream pie.

3/4 cup sugar
2/3 cup flour
1/8 teaspoon salt
2 eggs, well beaten
2cups milk (scalded)
1teaspoon vanilla
2 tablespoons butter (soft,I melt,but don’t get it hot)
Combine butter, sugar, salt,and eggs. Add scalded milk slowly,stirring constantly( I skip scalding the milk, I add it as is,using my hand held mixer to incorperate everything,low setting) Cook over hot water until thick and smooth.( I don’t use double boiler,just put it on burnner, medium heat,sturing constantly.
Add vanilla,after removing from heat.
