YEAST DOUGHNUTS

3 to 3 1/2 cups all purpose flour

2 pkg active dry yeast

3/4 cup milk

1/3 cup sugar

1/4 cup shortening

1 tsp salt

2 eggs

Cooking oil or shortening for deep fat frying

glaze or granulated sugar (optional)

Combine 1/2 cups of the flour and yeast.

Heat together milk, sugar, shortening, and salt till just warm. (115 degrees to 120)

Stir constantly.

Add to flour mixutre: add eggs. Beat at low speed of electric mixer for 1/2 of a minute.

Scrape sides of bowl constantly. Beat on high speed at 3 minutes.

Stir in as much of the remaining flour as you can mix in with a spoon. Turn onto a lightly floured surface. Knead in enough of the remaining flour to make a moderately soft dough. Continue kneading till smooth and elastic (3-5 minutes) Shape into a ball.

Place in greased bowl, turning once. Cover; let rise till double (45 to 60 minutes)

Punch dough down: turn out onto lightly floured surface. Divide in half, let rest 10 minutes.

 

1. Roll each half of dough into 1/2-inch thickness. Cut with floured doughnut cutter into doughnuts.

2. cover and let rise till very light (30-45 minutes)

3. Heat cooking oil or shortening to 375 degrees

4. Add doughnuts, a few at a time.

5. Fry about 1 minute. Turn and fry about 1 minute more or till golden

6. Drain

7. For glaze blend 2 cups sifted powdered sugar,1/4 cup milk and 1 tsp vanilla

dip warm donuts in glaze,

8. OR shake in bag of granulated sugar
