CHERRY PECAN BREAD

lightly grease a 9x5x3 inch loaf pan and set aside.

2 cups all purpose flour

1 tsp baking soda

1/2 tsp salt

3/4 cup sugar

1/2 cup butter

2 eggs

1 tsp vanilla

1 cup buttermilk

1 cup chopped pecans

1 (10  oz) jar maraschino cherries drained and chopped (1 cup)

in mixing bowl stir together flour, soda, and salt. Set aside

In large mixer bol cream together sugar, add butter eggs and vanilla till light and fluffy. Add in flour mixture and buttermilk alternately  to creamed mixture. Beat just till blended for each addition. Now fold in nuts and cherries. Turn batter into prepared pan. Bake in 350 degree oven for 55-60 minutes (every oven is different so watch close towards end)

Remove from pan and cool. if desired glaze with confectioners sugar icing.

Glaze

1 cup sifted powdered sugar

1/4 tsp vanilla

enough milk to mix to drizzling consistency…

using spoon, drizzle icing over bread or cake, while it sits on wire rack or waxed paper.. if desired sprinkle chopped nuts or fruit over top before icing sets.

for pink cherry flavored glaze, I just used some cherry juice with the confectionary sugar

Very moist..
